A recent study published in Nature Food suggests that targeted reductions in red meat and dairy intake could lead to healthier, more sustainable, and more affordable diets for Scottish adults if key nutrients such as calcium and iodine are maintained. The findings were announced on July 6.
Researchers analyzed dietary information from the 2021 Scottish Health Survey, which included 3,447 adults aged 16 years and older. Using microsimulation analysis, they modeled 35 dietary pathways reflecting recommended reductions by the UK Climate Change Committee and aligned with the Scottish Dietary Goals. These pathways included various approaches to reducing meat and dairy consumption, with or without replacing them with other foods such as vegetables, beans, eggs, fish, poultry, or plant-based alternatives.
The study found that nearly all modeled dietary changes produced favorable outcomes for nutrition, health risks related to chronic diseases such as type 2 diabetes and cardiovascular disease, environmental sustainability measures like greenhouse gas emissions reduction, and diet affordability. The greatest benefits were observed when daily red meat consumption was reduced to 31 grams among high red meat eaters while also decreasing dairy intake by 20 percent without substituting these foods. This approach led to estimated decreases in chronic disease risk—preventing over 59,000 cases of type 2 diabetes over ten years—as well as lower environmental impacts and reduced average daily food costs.
However, researchers noted declines in certain nutrient intakes across some reduction pathways: protein intake dropped by about nine grams per day; calcium fell by approximately ten percent; iodine decreased by around eleven percent; zinc and selenium levels also declined modestly. Young adults aged sixteen to twenty-four had the lowest baseline calcium intake before any changes. Replacing red meat with plant-based alternatives helped offset some nutrient losses but did not fully address iodine shortfalls when replacing dairy with oat-based substitutes.
Environmental indicators improved across all modeled scenarios—particularly those targeting high consumers of red meat—with significant reductions seen in greenhouse gas emissions as well as land use requirements. Diet affordability remained stable or improved under most scenarios except where oily fish replaced other proteins.
The authors acknowledged limitations including self-reported dietary data likely leading to underestimates of actual intake or impact figures; they also did not account for nutrient bioavailability or certain food-system stages like packaging waste disposal. The results suggest that balanced reductions in meat and dairy can support public health goals while advancing climate targets without raising grocery bills.
